Elaine Holton-Scott, 74, passed away on May 28. A mother, daughter, sister, aunt and a friend. A South Amboy native who also lived in several other places throughout her life including Parlin, California, Germany, Arkansas, Georgia, and finally back to Whiting, NJ for the last 3 years, prior to her death. She was unique and loved, a generous giver, always donating to many animal rescuers. She loved reading horror books, and really enjoyed performing random acts of kindness all her life. Always on the move and only recently learned to slow down. Recently painted her office and did some flower work detail. A huge animal lover and advocate. She loved to “doll-up” and was a proud woman. She was one of the strongest women I know. I am proud of her strength, and hope I have the same.” Elaine was a very talented writer/journalist and cook, and authored a cookbook, “You Can Do It” and also co-authored another one “Made In America” with her niece, Andrea Ploskonka.
